The inspiration behind my baking this cake is Y of Lemonpi. She mentioned on Twitter, sometime back, that she had managed to locate her recipe for a condensed milk cake. I don’t use condensed milk very much because I find that it lends too much sweetness to a lot of recipes, yet the thought of condensed milk in a cake caught my fancy. It also seemed the perhaps this meant that I could bake this cake without eggs.
When I asked, Y told me her recipe had both eggs and condensed milk. When I went on a net search I was surprised to find that using condensed milk in a cake wasn’t as big a deal as I thought it was. Apparently, lots of people have been doing it for ages! I guess I was tone of the few to whom this was news!

Most of the cakes I saw did seem to use both condensed milk and eggs. Some more searching led me to a condensed milk cake recipe (without eggs) at this discussion forum on Cake Central. I reduced the butter from 1 cup to 3/4 cup (because that’s all the butter I had on hand that day) and it didn’t seem to make a visible difference in the cake, texture-wise or taste-wise.
This condensed milk cake is soft and spongy yet firm. I think this cake would be great if you wished to cut it in half (horizontally) to sandwich it with jam, or some such filling.

So if you like condensed milk, cake that has no eggs and is very easy to put together then this is the cake for you. Despite my reservations, I did not find this cake too sweet. I usually prefer my “everyday” cakes unadorned, but you may cover the cake with a powdered sugar, a sugar glaze or ganache.

Egg Free Condensed Milk Cake
Ingredients
- 2 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 (400gm) can condensed milk sweetened
- 1 cup orange juice
- 2 teaspoons vanilla extract
- 3/4 cup butter melted (salted; if using unsalted , add 1/4 tsp salt)
- 1 cup dark chocolate ganache (optional)
Instructions
- Sift together the all purpose flour, baking powder, the baking soda and salt (if using) into a large bowl. In another bowl, mix together the condensed milk, orange juice, melted butter and vanilla extract till well blended.
- Make a well in the centre of the flour and pour the blended wet ingredients. Mix well, using a spoon or a whisk (do not whisk the batter)
- Pour the batter into a well greased and floured 9" cake tin or a bundt pan.
- Bake at 180C (350F)for about 30 to 40 minutes or till a skewer inserted into the cake comes out clean. Cool the cake in the pan for about 15 minutes, remove from the pan and cool on a rack.
- When the cake has cooled, spoon warm chocolate ganache over the cake and decorate with grated chocolate and silver dragees. Else serve the cake as it is, with coffee or tea.

I have made condensed milk cake many times but never used orange juice, hmm looks grt tea time treat 🙂
I made one last weekend too but minus orange flavour. I made the mistake of baking in a glass tray so the center didn’t cook as well. I want to try it again before posting.
This looks lovely. I have done a similar version too but I did not use orange juice. This sounds pretty new to me. I did some icing on it when I made it last time. 🙂

Aparna,The cake looks scrumptious.I am surprised that the cake is not too sweet.I have seen several recipes (including Sanjeev Kapoors and Tarla Dalal’s) thgh I never tried them thinking they were too sweet.Thanks for the taste info.The orange juice addition is very flavourful and I prefer orange in my cake.
I made a milk sweet with condensed milk a little while ago and it was exceedingly sweet. We couldn’t eat more than one piece per day and even that was cloying!

Your cake looks too good…..just have a question….lately when I have been adding orange juice in large quantities eg 1 cup, my cakes turns bitter….any idea how how to prevent it ??

Funny, it looks almost like a light, fluffy bread. I have never used condensed milk, but this looks so much like something my husband loves to eat in the morning with coffee – simple cake that he can smear jelly on.
this really looks yummy! i like using condensed milk in cakes as I find it gives a lovely rich texture. often i reduce the sugar then.

This looks so cute and the recipe looks so simple also I cakes that aren’t too sweet I think I will try it soon but I might use lemon juice with poppy seed topping. I’ve never made a cake using condensed milk. In fact, I think I’ve only used condensed milk in Magic Cookie Bars and to make dulce de leche! This cake looks yummy, a must try! Nicely done as always!

Thank you for the award, Priya.No Divya, no ganache. The brown colour comes after baking. Sometimes, when the amount of sugar is on the higher side, baked goods tend to brown a bit during baking.

Hi Aparna,I dont know how to start this msg… other than saying that its very interesting to meet my namesake who is also extremely passionate about cooking and baking!!! :-)Anyhow, I have come across your blog numerous times, but this is going to be my first comment! About 7-8 years ago, a neighbour’s relative had come to our house and baked a wonderful rose cake. At that time, I was still a kid and not too interested in cooking and baking… now that I have developed that interest… I am craving to make that one. I searched high and low on the internet for that cake recipe but nothing came close. I asked my mom if she remembered how to make it… and she said that the lady had used condensed milk and all purpose flour for it and no eggs… so i googled that and came across ur website. While I am definitely looking forward to try this version of condensed milk cake that you have posted on your site, I was wondering if you, the experienced baker, could provide some hints on how to bake a Rose Flavoured condensed Milk Cake (It was HEAVENLY!). Thank you and glad to meet yet another virtual namesake.As you said, you could add rose water instead of the orange juice. Another option would be to add rose syrup. You would get a much stronger flavour, I think.
Hey! I tried this recipe yesterday as a surprise bday cake for a friend. It turned out fabulous….didn’t miss the eggs at all. The orange juice added nice fresh taste to it. I also used only 1/2 cup of butter ( 1 stick) as that is all I had on hand. Thanks so much for sharing such a lovely recipe.

Surbhi, you can use Tropicana orange juice. You might have a very sweet cake though, as all the sugar in this cake comes from the condensed milk and cannot be adjusted.So just make sure that whichever orange juice you use is unsweetened.
Hi I want to make a lemon blue berry cake. How should I substitute the orange juice with lemon juice here? As per my understanding 1 cup lemon juice will be too much. Please suggest.
You can use about a 1/4cup lime juice and substitute the remaining 3/4 cup with water to make up for volume.
