Vegetarian Torta Ahogado
A very filling vegetarian version of the famous Mexican Drunken Sandwich from Gualadajara made with Birote bread, fillings and a fiery chilli-tomato sauce.

- 4 Birotes Salados or 6-inch long baguettes
- 1 1/2 cups refried beans
- 4 pieces batter fried paneer wedges 200 gm
- 2 ripe avocados cut into 1/4-inch thick slices
- 2 medium red onions thinly sliced
- 1 1/2 cup finely shredded cabbage
- 1 cup fresh coriander leaves and tender stems chopped
- 4 cups spicy tomato sauce
- 3 limes cut into wedges
Cut the Birote in half lengthwise and lightly toast them on the inside. I buttered my Birote halves but it is not necessary.
Then assemble the sandwiches. Start with a layer of refried beans, then sliced avocado, paneer fritters, sliced onions and shredded cabbage. Top with a little sauce and chopped coriander. Close the sandwich. Serve on a deep plate with lots of sauce on the sandwich and squeeze of lime juice.
