500 Salads: A Review And A Fruit Salad With Coconut Milk
There are people who enjoy salads, and I’m really not one of them. This probably has to do with the fact that, though we are vegetarian and cook vegetables in hundreds of different combinations, our traditional cuisine has hardly any preparations that include raw vegetables.
- 2 blood oranges (I used regular oranges)
- 1 pineapple baby
- 1 apple
- 2 kiwifruit
- 1 banana
- 2/3 cup coconut milk unsweetened thick
- 1 tbsp honey
- lemon juice freshly squeezed
- 1 seeds pomegranate from
- 1 tbsp cilantro chopped fresh (coriander)
Peel, halve and slice the oranges
Peel, trim and dice the pineapple
Peel, quarter, core and dice apple
Peel and dice the kiwi fruit
Peel and slice the banana
In a large serving bowl, mix all the fruit with the coconut milk, honey and lemon juice
Taste and add more honey or lemon juice as required
Mix in the pomegranate seeds and cilantro, chill and serve
