Guava & Sweet Corn Salad
A simple, light and filling salad made with white guavas, sweet corn, pomegranate arils seasoned with lime juice, salt and pepper.
- 2 cups large white guavas (about 4 cups chopped guava)
- 1 cup frozen sweet corn
- 1 cup pomegranate arils
- 1 large onion finely chopped
- 2 tsp fresh lime juice
- 1 tsp cumin powder
- Salt to taste
- Crushed black pepper to taste
If you like, you can just cook the sweet corn in boiling salted water for about 2 to 3 minutes and the drain. Otherwise, thawed frozen sweet corn also works.
Put the chopped guavas, sweet corn, onion and pomegranate in a bowl. Add the lime juice, cumin powder, salt and pepper. Toss till well mixed. Serve immediately.
