Watermelon & Passion Fruit Cooler
Watermelon and passion fruit blended with mint, sugar and rock salt to make a light and healthy cooler that’s perfect to beat the summer.
  1. Cut the half watermelon into quarters. Cut out the flesh and remove the seeds and chill for an hour or so. If you’re going to use ice, you needn’t chill the watermelon.
  2. Cut the passion fruit in half and scoop out the pulp and seeds into a small bowl. If you don’t like passion fruit seeds in your drinks, you can sieve them out.
  3. Muddle 4 sprigs of mint with the sugar and a little of the passion fruit juice. Blend the muddled mixture, the watermelon flesh and the rock salt till smooth. Stir in the passion fruit pulp and seeds.
  4. Pour into two tall glasses, garnish with mint and serve.
