This Watermelon & Passion Fruit Cooler is my new favourite right now. Summer is here again, and anything that cools you down is always welcome. Watermelons are everywhere these days. Of course, you can find them in the fruit section of the local supermarkets. You’ll also find them being sold, piled in heaps along the main roads not just in town, but even on the highways on the outskirts of smaller towns.
I love watermelon and it’s always on my shopping list in the summer. So these days, a mid-morning watermelon snack is on the menu at least twice a week. Last shopping trip, I also picked up some passion fruit. We get a variety of passion fruit here that has a mottled purplish skin here. It is a mix of sweet and tartness in taste, and I like that.
My husband isn’t a fan. There’s only so much passion fruit one can eat and I had four left. They were beginning to look a little wrinkled. So I turned our mid-morning watermelon into a cooler and mixed in the passion fruit. A little sugar and mint muddled together, a sprinkling of rock salt or kaala namak (black salt) and we were done.
I dislike chunks of ice in my cool drinks. The ice tends to melt and make the drinks watery. So I prefer to freesze juices into cubes and use them or else freeze or chill fruit depending on what I’m making. Here, I chilled the watermelon flesh in the freezer for about an hour before blending it. I also do not strain or sieve my fresh fruit juices so as to retain the fibre and keep them wholesome.
