Yesterday my daughter’s class at school was having their Christmas celebrations. Akshaya has been looking forward to this also because she would have a 10-day vacation immediately after this. She had wanted me to bake a cake to take to school. It just so happened that I have been recovering from a bit of a fever and cold and my energy levels are at an all time low.
I could have bought her something to take to school, but I know she was looking forward to taking something that “Amma made”. So I scouted around my recipe collection for an easy-to-do recipe. I found the perfect one in The Weekend Baker by Abigail Johnson Dodge. The best part about this recipe is that all the ingredients are mixed in the blender at one go and the resulting batter is baked. I don’t think cake making can get easier than this.
Abigail Dodge’s recipe is for chocolate cupcakes, so I adapted her recipe a bit and made a bundt cake. I have found that a lot of cakes that are made with oil as the fat of choice, tend to have a slightly pasty mouth feel which I don’t particularly like. However, oil does give cake a certain desirable moistness. So one thing I like to dowith cakes that usually are made with oil, is to substitute about a part of it with melted butter. Here, if you wish to use all oil please use 3/4 cup of oil.
I wanted a vanilla cake but if you want a chocolate cake, substitute 1/2 cup of the flour with cocoa powder. I covered the cake with glace icing and sprinkles according to my daughter’s wishes. Akshaya was one happy girl going to school with cake. Mission accomplished!
Quick Blender Cake
Ingredients
- 2 1/2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsps vanilla essence
- 1 cup water hot
- 1 1/4 cups sugar granulated
- 100 gm butter , melted
- 2 egg
Instructions
- Whisk together all the dry ingredients and set aside. Add all the wet ingredientsin the blender. Add all the wet ingredients except the eggs to the blender and blend till well mixed. Now blend in the eggs.
- Add the dry ingredients to the blender and blend till just smooth. You might need to scrape down any flour that sticks to the sides of the blender jar. Do not over blend!
- Pour the batter into a well greased and floured 8" bundt or tube cake pan and bake at 190C (375F) for about 40 minutes or done and a skewer comes out clean. Cool completely on a wire rack and serve, or decorate if you wish.
- My daughter wanted a chocolate icing on the cake so I made a chocolate glace icing with 2 cups of icing sugar, 1 tbsp cocoa powder and a couple of teaspoons of water and poured this over the cake. I have also covered this cake with chocolate ganache.
