Eggless Cornflakes Cookies


Our daughter, somewhere in between 11 and 12, was one of the reasons I started my blog. She was convinced that my cooking needed to be out there and shared with others.
She occasionally sits with me when I do my posts. When she saw the ingredient for Nandita's Weekend Breakfast Blogging this month was cornflakes, she wanted to make some cookies and have me send them in. I bake cookies quite often and Akshaya usually helps make them (she also tests the dough/ batter and the finished cookies, of course).




Akshaya made these cookies all by herself from a Tarla Dalal recipe that has been tweaked a wee bit. I only crushed the cornflakes and stayed in the kitchen to see that accidents did not happen.



Ingredients:


1/2 cup salted butter, softened

1/2 cup granulated sugar

1 cup all purpose flour

1 tsp baking powder (she forgot to add this)

1 tbsp lemon juice

1 tsp vanilla essence

1 cup crushed cornflakes, not powdered



Method:


Beat the sugar and butter till quite smooth. If the sugar stays granular it contributes to the texture of the cookies. Add all the other ingredients and blend well into a dough.

Pinch off pieces, roll and slightly flatten. Place on greased or non-stick tray and bake at 180 C for about 20-25 minutes till golden brown. Cool on a rack and store (if they last).

Akshaya forgot to put in the baking powder but they still turned out good, perhaps a bit flatter than usual.
This recipe makes about 12 cookies.

Isn't it great that your daughter loves your cooking.
When i makefood my daughter talls me after eating them that i should start a restaurant as the food will sell, but she tells me she'll be the cashier and i tell her i love cooking but i would love to keep it as a hobby.

Aparna, first time I am visting your blog and love it.
Dosen't feel so special when kids say those sweet truthful things especially about cooking. Waiting for my toddler to grow up..

And yes, appreciation from kids (and criticism) is unconditional. Though their tendency to want to help seems to disappear as they grow older!!!
